ITS VEGAN & HEALTHY FOODS WEEK WITH JENNI ALPERT

Indie artist Jenni Alpert will be the featured artist this week at Lhyme. A pop singer songwriter born and raised in Southern California, Jenni found her love for music of all kinds while studying music at UCLA and began writing music of her own. When she’s not in the studio writing or recording …she’s on the road touring with regularity both nationally and internationally which she says is ” due to my passion for performing, culture, and traveling.” Recently after putting together an independent West Coast Tour performing at Blood Centers and Blood Drives by day and local venues by night in support of America’s Blood Centers to encourage more people to donate blood, Jenni was brought on as a key speaker and performer for America’s Blood Centers events and will be performing at their 50th Anniversary fundraiser on March 24th. Jenni’s music has been featured on TV Shows such as Castle, CSI, The Real World, and Teen Moms.

Now on with the food….Jenni is a big supporter of eating healthy and eating vegan…”all things consciously in moderation” is Jenni’s approach to eating and she has been kind enough to share some of her favorite recipes for her favorite foods..some of her favorite dishes are Quinoa with chopped grilled veggies, Kale Salad, White Cabbage Salad, and Zucchini Soup.  

For Flavor Explosion One, I have cooked one of Jenni’s favorite recipes and decided to share it with all of our readers. ..I have never had Quinoa until I had to cook Jenni’s recipes and this recipe is definitely a new favorite for me. Hope you all enjoy.

JENNI ALPERT’S QUINOA RECIPE WITH GRILLED VEGGIES

Ingredients 
– 1/2 Yellow Onion chopped
– 1 Green Zucchini chopped
-EVOO
-1 package of Quinoa
– Sea Salt
-Cayenne Red Pepper
– Coriander
– 1 cup of Cranberries
-1/2 cup of Pine Nuts

Directions 
1)  Boil water in pot (with top)..once the water has boiled turn to low heat and add Quinoa. Also add a pinch of sea salt and a drop of EVOO, cover pot with top.
2) In a large saute pan, add onions, zucchini and EVOO and saute until caramelized. Add a pinch of sea salt, cayenne pepper and sprinkle Coriander.
3) Once all the water has been soaked up by the Quinoa, it is cooked. Make sure you continue to stir it so it doesn’t burn on the bottom of the pot.
4 ) Add Quinoa to large saute pan and sauté slightly with flavored veggies. Then
 add cranberries and pine nuts and you’re ready to eat !
FLAVOR EXPLOSION NUMBER ONE ! 🙂

        Going vegan has numerous hleath benefits, like lowering the chance of acquiring specific heart diseases. Still, it’s crucial to appreciate a vegan meal. I desire to share some vegan recipes but youtube wont let me post here, so I put it on my profile.

    These fresh qounia These fresh qounia salads became my favorite food this summer. I find myself making one like twice a week! (I really like mine with red/yellow peppers though)Thanks for the great recipe
