So its New Year’s Eve…the time of year where everyone begins to get their New Years Resolutions together about all the things they plan on doing differently in 2014. This tradition of a “new year/new leaf” is about as time honored as the weight loss , stop smoking and less drinking promises that come with it. However, to honor this tradition, I decided to offer a low fat recipe option that will certainly spice up any New Year’s Eve party and the guests don’t even have to know its good for them.
Kelly Clarkson, of course, was the inspiration for this recipe with her fabulously “Wrapped In Red” Holiday Special Release and her love of all things Salsa. Kelly’s latest holiday release “Underneath The Tree” topped the Billboard Charts at Top Ten for four weeks during December…talk about ending the year with a bang..lol…and the album itself, ” Wrapped In Red” debuted its first week at Number Three in the Adult Contemporary Charts.
I honestly could not think of a better artist to represent the last recipe of 2013 for LHYME. This American Idol Diva doesn’t seem to be slowing down any time soon even with a bun in the oven..she’s still working hard as ever with her Christmas Special and promoting this new album. “Underneath The Tree” is Clarkson’s Third Adult Contemporary Chart Buster with “Breakaway” standing strong for 21 weeks back in 2005.
Clarkson is also one of my favorite artists because she’s not afraid to keep it honest and real when it comes to her weight and industry expectations. She’s always been very upfront about the industry calling her fat which is just plain crazy considering she is smaller than majority of the population ! But now she says at least she has an excuse for being “big” and people will leave her alone while she is pregnant…Music industry can be two grapes short of a fruit salad sometimes but Kelly seems to swim in it just fine. She also recently expressed she will set the bar low and realistic for her post-baby weight loss that way the media doesn’t go too crazy about her post-baby weight. Honestly people I think women have enough pressures juggling career and baby when taking on motherhood, let’s take an easy on all the hard working moms out there. Ok..now I shall step down from my soapbox..lol.
One of Kelly Clarkson’s favorite things to nosh on is Chips and Salsa, so I decided to do a great red Raspberry Salsa ..it just reminded me of her album with the salsa having such a red vibrant color and of course, its one of Kelly’s favorite foods. This dish can be served with chips on top of some low fat whipped cream cheese or you can jazz up a seafood dish by topping it on your favorite fish..either way its great on taste buds and good for you too packed with Raspberries, Mangoes and Jicama..this is one dish you want to have in your weight loss arsenal 🙂 Happy New Years from all of us at LHYME !
WRAPPED IN RED RASPBERRY SALSA
1 1/2 cups Fresh Raspberries, diced
1/2 cup seeded and diced Tomatoes
1/2 cup diced fresh Jicama
1/2 cup diced fresh Mango
3 tablespoons chopped fresh cilantro
1 tablespoon minced Jalapeno
Juice of 1 Lime
1 tablespoon Honey
1/4 teaspoon Sea Salt
1) In a bowl, combine all ingredients and stir to blend.
2) Serve with Chips or on top of low fat whipped cream cheese. Makes 2 cups salsa.
