I recently heard Nicki Sbaffoni on one of her many live streams during Quarantine 2020. Sbaffoni’s powerful voice translates into fun and creative covers of our favorite songs. Prior to the quarantine, you could find Sbaffoni playing shows of covers and song requests on the Jersey Shore, Philly and New York. And these days, she’s a regular on the online music fest and virtual happy hour scene.
I reached out to Nicki Sbaffoni to find out what her fave food are. Her response, “Favorite food is tough. I like everything lol. I probably like breakfast food the best. Coffee, bacon, crepes, omelettes. I cook with lots of butter and like making sauces for everything. Definitely a carnivore.” And with that, I was up for the challenge of creating a Sbaffoni inspired omelette.

Let me preface this recipe by saying I do not make eggs in my house. My husband worked in the breakfast restaurant scene for over 6 years, so we’ve always relied on him to make the perfect egg any style you can imagine. When I began thinking about how to create an omelette worthy of a post on Lhyme, I immediately enlisted his expertise on the perfect omelette. (He was also more than happy to taste test this feature too!) Even as the primary cook in our household, I know my limitations and was ready to finally learn how to make a good omelette. I decided to incorporate local fresh ingredients with some good Brie, walnuts and freshly picked oregano to create a fun twist on a classic favorite, just like Nicki Sbaffoni’s music. Enjoy!
Bacon and Brie Omelette Recipe
Ingredients
- 3 eggs
- 1 tablespoon milk or cream
- 1 tablespoon finely chopped walnuts
- 1 tablespoon finely chopped fresh oregano
- 4 thin slices of Brie
- 2 slices of cooked bacon, chopped
- salt and pepper to taste
- 2 tablespoons butter
Directions
- Heat your stove to medium heat.
- Whisk your eggs and milk.
- Melt your 2 tablespoons of butter in the pan and pour the egg mixture in. Season to taste with salt and pepper.
- Loosen the edges of the egg from the pan with a rubber spatula.
- Cook until the egg starts to set before placing the brie, walnuts, oregano and bacon over half of the omelette and using a spatula to fol the other half over.
- Allow the egg to cook until brie is nicely melted and egg is done to preference.
- Serve immediately and eat!
