Amanda C began singing as a baby, inspired by her humming and melodies even before she could talk. When she was a little girl, her father taught her how to harmonize while singing. As she matured, her singing became a well-known feature in Rankin Circle, and she was often invited to perform at local events in her hometown of Holly Springs, MS. Her mother (momager) managed her early performances at various functions such as weddings, birthdays, and church events. Over the years, Amanda’s reputation as a talented singer, particularly at weddings, grew; she believes singing is her God-given gift and loves performing love songs. Amanda truly loves love. Now an independent artist, Amanda is focused on pursuing her passion for singing, aiming to fulfill her dreams regardless of the challenges.
Known professionally as Amanda C and dubbed the Mississippi Songbird, Amanda has released three co-written singles with her former producer: “Easy,” “Broken Record,” Black Queen,” and her single “Intimacy” which was self-written. She also operates her own music company, Amanda C Music. Amanda’s vocal style is inspired by legendary singers like Whitney Houston, Mariah Carey, Beyonce, Minnie Riperton, Diana Ross, Chaka Khan, Natalie Cole, Stephanie Mills, and other iconic powerhouse voices. She has always admired these artists for their undeniable talent and for being icons in their own right. Tragically, Amanda was deeply affected by Whitney Houston’s death, having dreamed of meeting her. Ms. Barbara Smith Anderson, her high-school choir director, also guided her in learning, appreciating, and ultimately cultivating her love and passion for classical music. As a mother, Amanda continues to sing around her home, influencing her daughters who also enjoy singing. Committed to her craft, she emphasizes the importance of rehearsal to keep her vocal skills sharp and enjoys experimenting with new vocal styles and musical genres.
So what can fans hope to see from Amanda in the future? Amanda’s goals include expanding her involvement in musical theatre and branching into indie films, building on her background in theatre and show choir. She aspires to attend more casting calls and break into the film industry. Also, Amanda wants to use her music to continue to connect with listeners on a personal level, sharing stories that resonate with those who can relate to her experiences. She plans to grow her brand, Amanda C. Music, and give back to others in her hometown who are pursuing careers in music and entertainment. Despite the challenges of being an independent artist, Amanda finds joy in positively impacting her audience, bringing them happiness and inspiration through her music. She wants fans to feel uplifted and take something meaningful away from her songs, reflecting her passion and wholehearted dedication to her craft.

When it comes to food, Amanda has a strong love for chocolate especially when pairing it with some vanilla ice cream. And she also loves Biscoff cookies. At home, she prefers making her own tacos, finding them superior to those from Taco Bell, and she avoids pork and seafood. Amanda relishes cooking simple yet flavorful dishes, especially for others, filled with love. A family favorite is her special chicken salad, served chilled with club or Ritz crackers, and sometimes as a sandwich with tomatoes and banana peppers. Amanda loves banana peppers which are usually incorporated in most of her savory dishes.
Omelets are another specialty of Amanda’s; she combines her dad’s and mom’s methods, incorporating ingredients like turkey breast, banana peppers, various cheeses, and seasonings, and finishing with cilantro and sour cream. Her father’s version includes tomatoes, onions, green peppers, and a touch of paprika.
For this recipe, I decided to go with Amanda’s signature omelet to truly capture her passion for cooking, her desire to connect with fans and loved ones, and her culinary skills. With a touch of sriracha, salsa, sour cream, and especially banana peppers, it is not only healthy and delicious but also rich in flavors. “Easy” Omelet with Banana Peppers
Ingredients
- 3 large eggs
- 1/4 cup chopped banana peppers and a few slices for garnish
- 1/4 cup roasted turkey breast, chopped (carving board style if you can find it)
- 1/2 cup shredded Colby Jack cheese
- 1/4 cup shredded mozzarella cheese
- Large pinch of fine sea salt, to taste
- Freshly ground black pepper, to taste
- 1 teaspoon paprika
- 1 tablespoon unsalted butter
- 2 teaspoons fresh cilantro, chopped for garnish
- TABASCO Sriracha Hot Chili Sauce, for drizzle to serve
Directions
- Crack eggs into a medium bowl. Add 1 tablespoon water, salt, paprika, and pepper. Whisk with a fork until egg whites are incorporated into yolks.
- Place a 9-inch skillet over high heat. Melt the butter.
- Pour in egg mixture and reduce heat to medium. With the back of a heatproof rubber spatula, whisk eggs around the skillet until the bottom begins to set. This takes only a few seconds.
- Add all your Colby Jack, turkey, and banana peppers.
- Use a spatula to fold the omelet in half. Then angle the skillet and a serving plate together, and flip the omelet onto the plate.
- Top with mozzarella cheese, fresh cilantro, drizzle with hot sauce, and top with banana pepper slices. Serve and enjoy!
