Dark, rich, and unapologetically real- these almond flour cosmic brownies with date sugar ganache are a tribute to Gwen Levey’s raw power and rebel soul. Check out the recipe below!

Gwen Levey, a Nashville singer-songwriter, has a magnetic, genre-blending voice that commands attention in rock, country, and pop. Her track “Not the Girl Next Door” highlights her unapologetic spirit and clever songwriting, while “All the Weed I Need” and “Barefoot and Pregnant” showcase her talent for catchy hooks and bold storytelling, making her music addictive. From Northern Virginia outside Washington, D.C., Gwen’s diverse upbringing influenced her musical tastes. Though no one in her family was a musician, her parents loved music; her mother even played songs through headphones on her belly during pregnancy. As an only child, she entertained herself, and music became her outlet. By the age of five, she was writing songs. Her parents supported her with one condition: she had to earn a college degree. Choosing between New York City and Nashville, a trip to Music City sealed her fate. In Nashville, she immersed herself in co-writing sessions and built connections by simply showing up and sharing her voice.

Gwen’s music blends country but is strongest in rock, influenced by artists like Stevie Nicks, Tom Petty, Linda Ronstadt, Bonnie Raitt, Neil Young, and Norah Jones, whose album, Come Away With Me, she admires. She draws songwriting inspiration from Taylor Swift, Kacey Musgraves, and Maren Morris, and respects Chappell Roan’s emotional pop. Though connected to Nashville and country, her style is a blend of rock and country, now leaning more toward rock and soul. Her first two EPs had a country-rock sound, but her new release fully explores her musical roots. Her forthcoming EP, Lighter, may evolve into a full-length album, with six songs already recorded and eight more in the works. Produced in collaboration with her drummer, Marcus Davis, this project brings a fresh sonic direction that’s energized and deeply personal. The title track, “Lighter,” reflects Gwen’s evolution as both a survivor and a truth-teller. Fans will surely appreciate her upcoming release, Lighter, which features an exciting variety of Gwen’s musical style, including captivating lyrics, heartfelt emotion, and a hopeful message for better days.

Empowerment is central to Gwen Levey’s artistry. As a bisexual woman in an interracial relationship with Jewish and German roots, she openly discusses the complexities of identity. She is also a survivor of both childhood and adult sexual assault. This experience inspired her powerful track, “Barefoot and Pregnant,” and led her to co-found the Rise Above Justice Movement, a coalition that supports fellow survivors of sexual assault. Her mission is clear: to help others feel less alone.

Every single song I write is part of my mission statement. I want listeners to leave with a sense of hope, no matter what the song is about.

Whether advocating for human rights or simply giving fans the freedom to show up as their authentic selves at her shows, Gwen leads by example—with vulnerability, grit, and an undeniable voice. Gwen Levey’s music is available now on all streaming platforms, with the first single from Lighter expected to be released this August. Don’t sleep on this rising voice—you won’t want to miss what’s next.

Gwen Levey sees food as more than just fuel — it’s part of her recovery, identity, and happiness. In early 2025, she realized she was addicted to sugar, which had gradually developed over the years. This insight prompted her to adopt an intentional, yet still enjoyable, sugar-free lifestyle. Now, she eats with awareness and care, often using natural sweeteners to satisfy her sweet cravings. Living with a progressive eating disorder, she avoids inflammatory foods such as white sugar and flour. Her preferred ingredients include almond flour and whole-food sweeteners to support her wellness and recovery. Her favorite snacks are blue corn tortilla chips with guacamole. She also enjoys cashews, Brazil nuts, and potatoes, which provide her with the energy she needs for her busy life. Gwen’s daily meals mainly consist of smoothies blended in her Nutribullet with flaxseeds, protein powder, and fruit. She follows a cyclical eating plan inspired by the book “In The Flow”, adjusting her meals according to her menstrual cycle to help support her hormones and energy levels.

When it comes to nostalgia, nothing beats her dad’s spaghetti—affectionately called “Daddy’s spaghetti.” There was never a written recipe; it was made with instinct and heart, and no one has ever been able to make it just right. Her mom’s French onion soup also holds a special place in her heart, a warm and comforting childhood staple. Growing up in a culturally rich household, Gwen was influenced by Middle Eastern and Asian flavors, which continue to inspire her cooking today, although she’ll never turn down a good Italian dish either.

In honor of Gwen’s healing journey, I made a sugar-free twist on a nostalgic favorite: a Cosmic Brownie—prepared with almond flour, luscious chocolate ganache made from chocolate chips sweetened with date sugar, and topped with sugar-free cosmic candy. It’s lively, fun, and satisfying—just like Gwen herself. Best of all, it’s gluten-free, refined sugar-free, and free from the processed chemicals she has learned to avoid. Cosmic Almond Flour Brownies (GF & Sugar-Free)

Ingredients

  • 1 cup almond flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup Monk Fruit (I used MONK FRUIT IN THE RAW)
  • 1/3 cup melted coconut oil
  • 1 teaspoon Madagascar vanilla extract
  • 2 tablespoons unsweetened almond milk

Ingredients for Chocolate Ganache and Toppings

  • 1/2 cup sugar-free chocolate chips (I used Just Date Organic 65% Cacao Dark Chocolate Chips)
  • 1/4 cup canned coconut cream
  • 1/8 teaspoon salt
  • 1 teaspoon Madagascar vanilla extract
  • Sugar-free rainbow sprinkles or naturally dyed candy pieces of choice

Directions

  1. Preheat the oven to 325°F and line an 8×8-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together almond flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, combine eggs, monk fruit, melted coconut oil, vanilla extract, and almond milk until the mixture is smooth.
  4. Combine wet and dry ingredients until a thick batter forms.
  5. Spread evenly into the pan. Bake for 25 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  6. Let cool completely before adding ganache.
  7. Heat the coconut cream in a small saucepan until hot, but be careful not to boil.
  8. Pour the hot coconut cream over the chocolate chips in a bowl. Let sit for 2 minutes, then stir until glossy and smooth.
  9. Let it cool slightly, then spread evenly over cooled brownies.
  10. While the ganache is still soft, sprinkle the top with your preferred candy decorations.
  11. Chill in the refrigerator for at least 1 hour to set before slicing into rectangles.
  12. Serve and enjoy!
