Madison has a joyful passion for food. She’s eager to try everything and loves breakfast the most. Her mom’s hearty morning spreads of eggs, bacon, and potatoes always bring back warm memories, and her family’s love for coffee is evident. Even after years, she still fondly remembers the creamy Malt-O-Meal she used to enjoy so much.

Growing up on the Texas coast, seafood was a staple — fish fries, fried shrimp, and other coastal favorites were standard in her home. Now, Madison has developed her own style in the kitchen, preparing signature meals for herself and her friends. Mango Sticky Rice

*Serves: 3–4

Ingredients for Sticky Rice

  • 1 cup glutinous (sticky) rice
  • 1 cup full-fat coconut milk
  • 3 tablespoons golden pure cane granulated sugar
  • 1/4 teaspoon sea salt
  • 2 ripe mangoes (peeled, sliced)
  • Toasted sesame seeds for garnish

Ingredients for Coconut Sauce

  • 1/2 cup coconut milk
  • 2 tablespoons golden pure cane granulated sugar
  • 1 teaspoon cornstarch
  • two teaspoons of water

 

 

Directions

  1. Rinse the sticky rice until the water runs clear. Soak it for at least 4 to 6 hours, ideally overnight.
  2. Drain the rice and steam for 20–25 minutes, until tender but still chewy.
  3. In a small saucepan, heat 1 cup of coconut milk, three tablespoons of sugar, and 1/4 teaspoon of salt.
  4. Stir in steamed rice and cook for 3–5 minutes until creamy. Let it rest for 5 minutes.
  5. Heat 1/2 cup of coconut milk and two tablespoons of sugar.
  6. Mix the cornstarch and water together until a smooth slurry forms. Add the cornstarch slurry and simmer until thickened.
  7. Plate the coconut rice, arrange the sliced mango on top, drizzle with the coconut sauce, and top with toasted sesame seeds.
  8. Serve right away for the best flavor. Refrigerate leftovers and reheat the rice with a small amount of water.
