Born and raised in Philadelphia, PA, music has always been a big a part of Chris White. He recently started spinning music as a hobby and then got a gig DJ’ing at a local Delaware County bar. Once the pandemic hit and everyone was in quarantine, Chris started DJ’ing for fun on Facebook Live. “I thought this was a good way to get people to let loose and forget about what was going on in the world around them.”

As White started to get a fan base and wanted to give back during the pandemic. He began to get friends and fans together to feed local frontline workers around Delaware County. Most recently, he joined up with a few friends that created the Facebook group, Delco Angels. Delco Angels is a group that collects goods and donates them to local families in need that have been affected by the pandemic.

I recently reached out to Chris to find out what his favorite dishes are and he said,”I love pasta 3 favs would be Pasta with Chicken Parm, Penne Alla Vodka, and Alfredo.” I absolutely love cooking Italian and pasta dishes! And with that, I give you a Chris White inspired Chicken Parmesan Recipe. I used almond flour and Panko crumbs to give the chicken a delicious and healthy breading. My not so healthy eating husband was a big fan of this recipe! I also used Palmini noodles for mine (hubs had regular spaghetti pasta) and it was fantastic! Check out the recipe below and enjoy!

Chicken Parmesan Recipe

Ingredients

    • 1.5 lbs boneless skinless chicken breasts thin sliced or pounded to 1/2″ thickness
    • 1 1/4 cup almond flour
    • 1/4 cup Panko bread crumbs
    • 1 1/4 tsp pink Himalayan salt
    • 1/4 tsp black pepper
    • 2 tsp oregano
    • 1 tsp onion powder
    • 1/2 tsp garlic powder
    • 1/2 tsp paprika
    • 1 egg whisked
    • 1/4 cup organic coconut oil for frying
    • 25 oz jar Marinara sauce of choice 
    • 4 slices fresh mozzarella cheese
    • Minced parsley or basil for garnish
    • Favorite Spaghetti Pasta or Palmini noodles for the carb free option

Instructions

  1. Mix all the dry breading ingredients and spices in a medium shallow bowl and have your whisked egg in a separate small bowl on the side for dredging.
  2. Preheat your oven to 400 degrees F.
  3. Heat a large, deep skillet over medium heat and add the coconut oil. I love a cast iron skillet for these kinds of dishes because they’re wonderful for frying and popping in the oven.
  4. Once the skillet it preheated, dip one chicken breast in the egg and then coat in the dry breading mixture, shaking off excess. Place the chicken in the pan, then repeat the process for each piece of chicken.
  5. Cook on each side for 2 minutes until medium-golden brown. When done, set aside on a plate.
  6. Place about 1 1/2 cups marinara in the bottom of a 9×13” baking dish or grab the skillet you’ve used to cook the chicken (if it is oven safe) and pour the sauce in there. Place the fried chicken breasts over the sauce layer. Spoon 2 Tbsp more sauce on each chicken breast, then place a slice of mozzarella cheese on top.
  7. Bake in the preheated oven for 10 to 15 minutes or until just heated through. This is only to heat through, so do not keep it in the oven too long. Garnish with parsley or basil and serve immediately with favorite pasta, low carb option or even alone!
