Karina is a talented 17-year old from Bavaria, Germany possessing a soft yet powerful voice in her covers. She has always loved listening and performing music her whole life with her big dream to one day perform for an inspired large crowd on a big stage.

I reached out to Karina to find out her favorite foods and her response was “Pasta with anything but especially Salmon or normal Tomato Sauce with a little bit of Calabrese. Or Pizza with Tuna and Olives, Croissante and Rice Pasta with vegetables.” So fun and different! I decided to make a healthy twist on Karina’s favorite pizza by making the crust out of spaghetti squash and topping it with a delicious combination of Mediterranean toppings including tuna and olives. This crust is an awesome alternative to the typical low-carb options like cauliflower crust for pizza. Its delicious and without the veggie aftertaste in the crust. Check out the recipe below. Ingredients

  • 3 1/2 cups cooked spaghetti squash, cooled
  • 2 tablespoons rice flour
  • 1 large egg, slightly beaten
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon pink Himalayan salt
  • 1/2 teaspoon oregano
  • 1/4 teaspoon ground black pepper
  • 12 black olives, sliced
  • 1- 3 ounce package of tuna of choice, drained. I used Safe Catch Elite Wild Tuna
  • 1 1/2 cups mozzarella cheese shredded
  • 1/4 cup crumbled goat cheese
  • 1/2 cup of sun-dried tomatoes, sliced 
  • 1/2 cup red onion, sliced
  • Fresh chopped basil for garnish
  • 1/2 cup artichoke hearts, chopped
  • 1/2 cup capers

Directions

  1. In a strainer, place the spaghetti squash and press down to get as much liquid out as possible.
  2. Place the strained squash in a bowl, add in the rice flour, beaten egg, salt, Parmesan cheese, oregano and pepper. Mix together. If the mixture is too runny, add more rice flour.
  3. Place a piece of parchment paper on a baking sheet; lightly spray with non-stick.
  4. Put the dough mixture on to the center of the parchment paper and gently spread out the mixture into a 12” circle with the edges up to form a crust. The crust should be about 1/2” thick.
  5. Bake for 25 minutes or until the crust edges and bottom are golden brown.
  6. Generously sprinkle mozzarella cheese, followed by the tuna, tomatoes, onions, capers, artichokes and olives. Top with the goat cheese
  7. Bake for 5-8 minutes until your cheese is melted! Eat!
