Chriss Casper hails as a Hip-Hop artist from Romania specifically in the style of fusion rap. He has most recently left the judges of X-Factor Romania in awe of his talent performing “Lil Paris” on this season’s X-Factor.

I reached out to Chriss to find out what his favorite foods are and his response was, “Taco & guacamole, oysters in wine, steak.” With fall upon us, I wanted to take a fun spin on Chriss’s favorite guacamole and incorporate some roasted butternut squash to give it more a autumn season feel.

Black Forest bacon, pomegranates perils, pepitas, cilantro and Everything but the Elote seasoning made this an absolutely delicious spin on guacamole. I felt all the colors and unique ingredients really captured Chriss Casper’s upbeat and colorful style.

Fall Harvest Guacamole

Ingredients 

  • 4 slices cooked Black Forest bacon (cook these however you would normally cook your bacon oven or skillet is fine)
  • 2 cups cubed butternut squash
  • Pink Himalayan Salt
  • Freshly ground black pepper
  • 1 teaspoon Tunisian olive oil (or whatever good olive oil you have laying around)
  • 2 tablespoons roasted pumpkin seeds
  • 1/3 cup fresh pomegranate seeds
  • 4 avocados, mashed
  • juice of 1 lime
  • juice of 1 lemon
  • 2 tablespoons Everything but Elote seasoning
  • 1/4 cup freshly chopped cilantro
  • 1/4 teaspoon garlic powder

Directions: 

  1. Preheat oven to 400℉. Line a rimmed backing sheet with foil. Place butternut squash of baking sheet and toss with olive oil , pink salt and freshly ground pepper to taste. Roast for 20 minutes.
  2. Add avocado, cilantro, Elote Seasoning, lemon and lime juice to a mixing bowl. Combine until mixed well.
  3. Next, fold in the chopped bacon and pumpkin seeds, then the pomegranate seeds.
  4. Fold in the butternut squash gently not to mash the squash as it is quite soft once roasted.
  5. Garnish with extra cilantro, pumpkin seeds and pomegranate seeds. Serve with favorite chips and enjoy!
