Jai’s latest EP release Monarch gave me smooth and silky hip-hop vibes I had to put on repeat. An understated artist in the local Nashville Hip Hop scene, Jai gives listeners a smoky late-night soul vibe with her originals.

Nashville isn’t all about Country music and has some gifted Hip-Hop and Soul artists like Jai showing a different vibe to the mainstream scene. So necessary and can’t wait to see where this talented artist goes. Already added Monarch for steady rotation in my playlist and awaiting more releases from Jai.

I recently reached out to Jai to find out what her favorite foods are and her response was, “Some of my favorites are Banana pudding, chicken Parmesan, and chicken lettuce wraps!”

I couldn’t decide which style of Banana Pudding to feature for Jai as she really offers such a diverse and unique sound, so I decided to roll with three different styles of Banana Pudding. I made a simple pudding but change it up with Funfetti cake, Chessmen cookies and the original Vanilla Wafer cookies. Be sure to check out Jai and the recipe below!

Banana Pudding Recipe 

Ingredients

  • Funfetti Cake (baked according to package directions and cooled) 
  • Iced Animal Crackers
  • Small package of Vanilla Wafer Cookies
  • 15 Chessmen Cookies
  • 1 cup Heavy Whipping Cream
  • 1 teaspoon Vanilla extract
  • 1 8-ounce container of Cool whip ( but if you can also use homemade whipped cream as well) 
  • 1 tablespoon Monk Fruit Sweetener or powdered sugar (depending on whether want sugar or not) 
  • Vanilla 
  • 1 package of Vanilla Pudding (about 5 ounces) 
  • 2 cups of cold Milk 
  • 1 can of Condensed Milk (usually about 15 ounces) 
  • Bananas

Directions 

  1. In a large mixing bowl or Kitchen Aid mixer, beat pudding mix and milk for about 2 minutes. Blend in the can of condensed milk until smooth. Refrigerate overnight! (at least three hours or use the instant kind of you’re in a pinch for time.
  2. Grab whatever Ball jar, trifle bowl or decorative serving container you like.
  3. Whip your heavy whipping cream, sweetener and vanilla together to make your whipped cream topping of choice.
  4. Slice your bananas
  5. Funfetti Cake Style: Cut your cake pieces into tiny squares and layer one layer cake, one later sliced bananas and one layer pudding. Repeat for one more layer. Then do one layer iced animal crackers, bananas and pudding. Top with whipped cream and decorate with animal crackers.
  6. Chessmen Style: Substitute all the layers above with Chessmen cookies instead of cake and animal crackers.
  7. OG Vanilla Wafer Style: Substitute all the layers above with Vanilla Wafer cookies instead of cake and animal crackers. Crumble some Vanilla Wafer top with the cookies as well.
