Emma Charles is a 22 year old folk-pop artist from Westport, Ct. Her soft and beautiful vocals paired with clever lyrics make her an artist to watch as next emerging talent in the music industry. Emma graduated with honors from the prestigious Berklee College of Music and currently resides in LA writing, performing and continuing to record. She was recently chosen as a “What’s Next” artist by the world’s largest music compilation brand NOW, That’s What I Call Music joining previous “What’s Next” artists Billie Eilish, Shawn Mendes among others.

 

 

Emma’s recent releases have been streamed collectively well over 500,000 times and she will be releasing four additional new songs over the next several months. I am absolutely loving Emma’s vintage swag in her videos and photos. Her latest release, “Osmosis, reflects that vintage look with solid vocals and musicality. She has a genuine and tangible feel to her music and performance fans will appreciate.

I recently reached out to Emma Charles to find out her favorite noshes and her response was, “Music and food are two of my biggest passions as well! For savory foods, I love anything salmon, pasta, veggies and I have a huge sweet tooth.  So for sweet, I love chocolate, citrus, vanilla ice cream or cake!”

I haven’t made anything sweet recently on Lhyme, so I decided to combine a couple of Emma’s favorite things, chocolate and citrus; and make a rich, sweet dessert that is perfect for fall weather. Check out the recipe below

 

 

Chocolate Cake with Chocolate Orange Ganache and Candied Oranges

Ingredients for Chocolate Cake

  • 1 3/4 cup unbleached flour
  • 1 3/4 cup sugar
  • 1 cup whole milk
  • 3/4 cup unsweetened cocoa (use Dutch)
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon pink Himalayan salt
  • 1/2 cup coconut oil
  • 1 cup hot water
  • 2 Eggs
  • 1 1/2 teaspoons pure vanilla extract

Ingredients for Orange Chocolate Ganache

  • About 6.5 ounces Lindt Excellence Intense Orange Dark Chocolate Bar
  • 1/2 cup heavy whipping cream

Ingredients for Candied Oranges

  • 4 small to medium oranges, sliced
  • 8 cups water
  • 4 cups sugar

Directions

  1. Fill a large bowl with ice water to create an ice bath for the cooked oranges and set aside.
  2. Add 4 cups of the water to a large saucepan and bring to a boil over high heat. Add the orange slices. Boil for 2 minutes. Transfer the orange slices to the ice bath.
  3. In a saucepan, add four cups water and sugar. Bring to a boil over medium heat, stirring occasionally until the sugar has completely dissolved.
  4. Turn the heat to medium-low and add the orange slices. Simmer on low heat for 60 minutes.
  5. Transfer the slices to a cooling rack that I placed over a large baking sheet. Let the orange slices rest and dry for 24 hours.
  6. The next day, preheat oven to 350 degrees.
  7. In a large bowl, stir together flour, sugar, cocoa, baking soda, baking powder, and salt.
  8. In mixing bowl, beat oil, eggs, milk, and vanilla for 1 minute. Add dry ingredients to wet ingredients and stir until combined. Pour in hot water and mix together.
  9. Butter or non-stick spray two 9-inch cake pans. Bake for 25 minutes or until the toothpick test comes out clean.
  10. Set aside to cool.
  11. In a double boiler, cook the orange chocolate and heavy whipping cream until smooth. Stirring constantly.
  12. Drizzle and spread the ganache over each layer of the COOLED chocolate cakes. Top with your candied oranges and maybe add some chocolate chips or shavings. Serve and enjoy!
