FOR TODAY’S FLAVOR EXPLOSION I DECIDED TO CAPTURE NANO WHITMAN’S LOVE FOR THE SWEET AND SAVORY COMBINATIONS WITH A VERY HEALTHY SOUTHWESTERN DISH THAT HAS LOVE WRITTEN ALL OVER IT ! THE INCORPORATION OF JICAMA INTO THIS DISH ADDS A SWEET FLAVOR TO THIS FRESH SAVORY SALAD. TASTY, HEALTHY, SWEET, AND SAVORY…NOW THAT’S WHAT I CALL A FLAVOR EXPLOSION !!!

 

 

BY AND BY ORANGE ROSEMARY CHICKEN WITH SOUTHWESTERN GRILLED VEGETABLE SALAD WITH A CITRUS VINAIGRETTE

 

Ingredients for the Chicken

6 Fresh Chicken Breasts

The fresh juice of one Navel Orange

4 large sprigs of Fresh Rosemary cut into halves

 Sea Salt

Ground Black Pepper

 

Directions

1) In a medium bowl , mix all the ingredients together and allow to marinate for at least three hours.

2 ) Grill the marinated chicken until fully cooked and set aside to make your salad.

 

 

Ingredients for Citrus Vinaigrette

– 1/4 cup of EVOO

1/4 cup of fresh Lime Juice

Sea Salt

1/4 teaspoon of Cumin

Ground Black Pepper

1/3 cup of fresh Orange Juice

-2 tablespoons of Honey

 3 tablespoons of fresh chopped cilantro

3 tablespoons of fresh chopped shallots

 

Directions

1) Mix all the ingredients together and then refrigerate until ready to serve.

 

Ingredients for Grilled Vegetable Salad

 1 Jicama chopped into cubes

1 Orange Bell Pepper chopped into cubes

1 Avocado chopped into cubes

1 can of Black Beans

3 Fresh Ears of Corn

1 large fresh slicing Tomato chopped into cubes

Citrus Vinaigrette

 

Directions

1 ) Grill the peppers and corn until each vegetable has nice grill marks on them

2) Use a sharp paring knife and start at the top of each ear of corn and slice down to the bottom of the ear and you ‘ll have all your corn ears for the salad

3 ) Arrange all your vegetables to your liking on a serving plate and pour your Citrus Vinaigrette over the top and serve with the Grilled Chicken.
