Power, emotion, soul, stunning vocals and strong musicality are just a few descriptions that came to mind when listening to any one of She Nova’s original songs. I first heard She Nova early in 2020 with her release of “Neon Tears”; and I literally could not stop playing that song. The level of musicality, powerful lyrics and alluring vocals in She Nova’s music draws fans in for a unique experience with masterful production, vocals and songwriting.

 

 

 

Her cover of Lady Gaga’s “Alice” among other mainstream artists’ covers are one of the only covers that actually do justice to the original artist. If I had to compare her to any mainstream artist, She Nova gives me strong Lady Gaga and Sia combined vibes with her own original, purple twist. 100 percent mega pop star with soul in the making!  Most recently, she has released “Gray”, a song about being an outsider and misunderstood. The lyrics of this song speak volumes about being your own unique self and the struggle of not fitting into a mold. Again, I cannot say enough how much I absolutely love the musicianship and talent of She Nova’s songs.

In addition to her power pop original music, She Nova also has a podcast entitled, Boss Pod, where she interviews and has honest conversations with various guests in the music industry. Boss Pod explores what really goes into creating “a work of art”.  Host and creator, She Nova interviews influential people of all artistic fields from musicians and writers, to videographers and designers, to discuss how they turned their passions into their livelihoods.  Being an artist in music herself, Nova asks the hard questions to reveal the true nature of the process and progress of being an artist.

She Nova is a vegan and when recently asked about her favorite noshes she responded with, “I love sweetssss! But I’m vegan and try to limit sugar so RIP my fave: donuts!!! Also love all fruits! Fave dish: vegan Thai tom kah soup and summer rolls with peanut sauce! And spaghetti is good too…”

After listening to She Nova’s music for inspiration, I decided to go with making a healthy version of her favorite dessert, sugar-free vegan donuts with a purple glaze. These donuts are cakey, sweet and you absolutely will not believe they are sugar free. So get your mixing bowl out, your ipad on She Nova’s YouTube channel and get to baking! 🙂

 

 

Vegan Glazed Donuts

Ingredients for Donuts

  • 1/4 cup oat milk or whichever milk alternative you prefer
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon pure vanilla extract
  • 3 1/2 tablespoons avocado oil
  • 1/3 cup monk fruit sugar alternative sweetener (Lakanto is the best for this if you can find it or you can also use maple syrup)
  • 1 cup flour, loosely packed
  • 1 teaspoon baking powder
  • 1/4 teaspoon pink Himalayan salt
  • Non-stick cooking spray

Ingredients for glaze

  • 3/4 cup monk fruit sugar alternative (again Lakanto is best)
  • 2 tablespoons Cornstarch
  • 2 tablespoons oat milk ( or another milk alternative /water)
  • 1/2 teaspoon pure vanilla extract
  • Gel food coloring of choice
  • Sprinkles for decorating (optional)

 

 

Directions: 

  1. Grease a donut pan and preheat oven to 350 F.
  2. In a medium mixing bowl, combine milk, vinegar, vanilla, monk fruit and oil.
  3. Then add flour, salt and baking powder, mix until well incorporated but don’t over mix.
  4. Thoroughly spray your donut pan with non-stick spray and pour mixture into donut pan and bake for 8 minutes.
  5. Remove from oven and let cool for 5 minutes before removing from the donut pan.
  6. Then remove from donut pan and allow to completely cool before making your glaze.
  7. In a small bowl, use a whisk or fork to combine together the monk fruit sugar alternative and cornstarch.
  8. Then, add the milk or water and vanilla extract. Mix until the ingredients appear to be mixed together.
  9. Add your food coloring and mix until desired color is reached.
  10. Glaze your donuts and add sprinkles if you like.
